Candidate Requirements

Key Responsibilities:

Recipe Development: Design and develop innovative and profitable menus, ensuring high-quality standards and cost-effective production.

Cost of Sales Management: Understanding and managing cost of sales to ensure budget adherence and profitability.

On-site Training: Provide training and mentoring to property teams on culinary techniques, food quality, and standards.

System Training & Support (Micros): Ensure staff are proficient in using Micros systems, offering system support and troubleshooting when necessary.

Collaboration with Properties & Suppliers: Work closely with on-site property teams and suppliers to drive initiatives that enhance customer experience and generate revenue.

Event Support: Provide support during functions/events when needed, ensuring food and beverage services exceed expectations.

Reporting: Prepare accurate reports on food and beverage performance, including sales, costs, and other key metrics.

Negotiation Skills: Demonstrate strong negotiation abilities to secure favorable deals with suppliers, vendors, and partners.

Requirements:

Experience: Proven experience in a senior culinary or food and beverage management role.

 Personal Attributes:

·         Excellent communication and negotiation skills.

·         Strong leadership and team-building capabilities.

·         Travel: Able to travel to various properties as required.

·         License: Valid driver’s license is essential.

·         Location: Based in Ballito, with flexibility to travel frequently.
