Our team is passionate about crafting exceptional dining experiences, and we are looking for a skilled Hot Section Chef de Partie (CDP) to join us in delivering excellence on every plate.
Job Summary
As the Chef de Partie – Hot Section, you will be responsible for leading your station with precision, ensuring that all hot dishes meet our high standards of quality, consistency, and presentation. You will work closely with the Sous Chef and Head Chef to execute the menu efficiently, maintain kitchen hygiene, and contribute to menu innovation.
Key Responsibilities
Hot Section Execution:
- Prepare and execute all dishes from the hot kitchen section with accuracy and consistency.
- Ensure mise en place is always ready and maintained to the highest standard before service.
- Work closely with the pass to ensure smooth service and excellent plating.
- Monitor portion control and waste management to maintain food cost efficiency.
Quality & Standards:
- Maintain the highest food quality and presentation in line with Upper Union’s standards.
- Follow recipes, plating guides, and portioning requirements to ensure consistency.
- Check all dishes before they leave the kitchen to ensure proper seasoning, temperature, and presentation.
Kitchen Operations & Hygiene:
- Maintain strict hygiene and safety protocols in accordance with health regulations.
- Keep your section clean, organized, and stocked at all times.
- Ensure all equipment is properly used, cleaned, and maintained.
- Monitor stock levels, conduct daily checks, and report shortages or issues.
Collaboration & Leadership:
- Work seamlessly with other sections to ensure smooth service flow.
- Assist in training and mentoring junior chefs, guiding them on techniques and standards.
- Communicate effectively with the kitchen team to ensure efficient service.
- Support menu development with ideas for new dishes and improvements.
Requirements:
- Proven experience as a Chef de Partie (Hot Section) in a high-end or fast-paced kitchen.
- Strong understanding of hot kitchen techniques, including grilling, roasting, sautéing, and sauce-making.
- Passion for ingredient-driven, locally sourced cooking.
- Ability to work efficiently under pressure while maintaining high standards.
- Strong organizational and time-management skills.
- A team player with excellent communication and leadership skills.
- Knowledge of food safety and hygiene regulations.
- Culinary qualification is an advantage but not required if experience is sufficient.
