- Meal Preparation: Plan, prepare, and cook daily meals for lodge staff, including breakfast, lunch, dinner, and snacks, catering to various dietary needs and preferences.
- Menu Planning: Design and rotate menus that are nutritious, diverse, and budget-conscious, while also using seasonal and locally-sourced ingredients where possible.
- Food Safety & Hygiene: Ensure all food is prepared and stored according to the highest standards of hygiene and food safety regulations, maintaining a clean and organized kitchen environment.
- Inventory Management: Monitor food supplies, order ingredients, and manage stock levels to avoid waste while ensuring the availability of necessary ingredients.
- Team Collaboration: Work closely with the Head Chef and other kitchen staff to maintain consistent standards across all meal services, including occasional assistance with guest meals during peak times.
- Budget Management: Keep track of food costs and work within the allocated budget while maintaining high-quality food standards.
- Adaptability: Be prepared to handle challenges associated with a remote working environment, such as limited access to certain ingredients, and adapt menus and techniques accordingly.
- Training & Development: Mentor and train junior kitchen staff, helping them develop their skills and maintain a positive working environment.
- Lodge Support: Assist in other areas of lodge operations as required, particularly during busy periods or special events.
The Canteen Chef will be responsible for preparing and serving high-quality meals for the lodge staff, ensuring that the canteen operates efficiently and maintains the highest standards of cleanliness and food safety. The role involves working in a remote location, requiring a creative, adaptable, and self-motivated individual with a passion for hospitality and a strong understanding of culinary arts.

Candidate Requirements
- Education: Culinary diploma or relevant qualification from a recognized institution.
- Experience: Minimum of 3-5 years of experience as a chef, preferably in a remote or lodge environment.
- Skills:
- Strong culinary skills with a focus on international and African cuisine.
- Excellent understanding of food safety and hygiene practices.
- Ability to work independently and as part of a team.
- Good organizational skills and attention to detail.
- Flexibility and creativity in menu planning.
