Job Purpose
Assist the Head Chef and Sous Chef to achieve the highest standards of food quality and customer satisfaction. Preparation, cooking, and presentation of meals, and contribute to the planning and managing of activities related to the production and management of staff.
KEY RESPONSIBILITIES
Production Preparation
- Preparing, Cooking, and plating meals according to menu specification.
- Confirm cleanliness and that all equipment is in working order, report problems to Sous Chef.
- Manage stock rotation according to FIFO and LIFO principles to ensure adherence to HACCP Standards.
- Confirm menus and functions for the day to determine ingredients according menu specification and delegate staff of stock requirements.
- Supervise the preparation and cooking of food according to menu specification, appropriate cooking methods, and HACCP standards to ensure food is available according to flight schedules.
- Perform daily, Weekly, and monthly stock taking according to departmental procedures.
- Oversee the production process to minimize wastage according to organisational requirements.
- Ensure that Job Cards, Cooking Sheet, CCP’s, Portion Control sheets, Food Preparation Sheets, Hand Over Sheet/Report and other relevant operational documents are completed according to departmental requirements.
- Order stock from stores as per requirement and in accordance to stock level requirement.
- Adhere and apply all systems and procedures applicable in the workplace in accordance with company policies including but not limited to SOPs, GMPs, XXX-XXXX8 QMS, OHSAS etc.
Food Preparation – Hot and Cold Kitchen

- Supervise the preparation and cooking of food according to menu specification, appropriate cooking methods, and HACCP standards to ensure food is available according to flight schedules.
- Perform daily and monthly stock taking according to departmental procedures.
- Oversee the production process to minimize wastage according to organisational requirements.
- Ensure that Job Cards, Cooking Sheet, CCP’s, Portion Control sheets, Food Preparation Sheets, Hand Over Sheet/Report and other relevant operational documents are completed according to departmental requirements.
People Management
- Manage subordinates' activities to ensure the achievement of targets and standards.
- Manage time and attendance of sub-ordinates.
- Assess performance of sub-ordinates and ensure the appropriate ER actions are implemented to correct non-performance.
SHEQ
- Adhere to all aspects of Security, SHEQ, HACCP and operational policies and procedures.
- Adhere to all aspects of Occupational Health and Safety, Security and Food Safety Management System guidelines and operational policies and procedures.
Candidate Requirements
Education Level: (minimum)
- Certificate/Diploma in food Hospitality related courses.
Experience and trainin required
- Minimum of 5 years’ experience as a Chef
- Airline catering environment experience an advantage.
- Computer literacy.
- Valid driver’s license
Knowledge and Competencies:
- Good communication and leadership skills
- Valid driver’s license
- Good understanding of industrial relations
- Basic business management skills
- Knowledge of SAP an advantage
- Knowledge of food safety management systems
- Knowledge of SHEQ management
- Ability to perform in a highly pressurized environment
- Hands on management
