Job Purpose
Senior member of production, working closely with and reporting to Head Chef. Ensuring that the core function of preparing Cold and Hot meal for all flights is done according to airline and recipe specification and within box time and food safety management

Key Resposibilities:
- Planning and Management
- Lead team meeting, review performance and determine actions
- Review performance, identify problem areas and determine decisions and actions required
- Set and ensure progress and achievement of performance target.
- Production Planning and control - Product output and control using daily flight Schedule, production plan and figures obtain from systems and planning.
- Implement and enforce process and systems controls to ensure an effective and efficient operation.
- Ensure and place stock orders on stipulated time gates according to figures provided by systems and planning.
- Validate material requirements and Interpretation of recipes in order to meet mass catering and daily forecasting.
- Manage and monitor preparation of staff canteen meals.
- Communicate with stores and QC to ensure that all times that are due to expire are used effectively.
- Communicate Deviations procedurally.
- Create Job cards for plating, cooking, pre-preparation and butchery.
- Issue, validate and handover CCP documents to QA at end of each shift.
- Ensure that daily meal tasting and specification compliance ( portion control, e.tc ) table is conducted daily with junior chefs.
- Ensure that extras are prepared , signed and handed over to the uplift team.
- Participate in food safety audits and provide feedback when non-conformances are noted.
- Weekend standby and able to work shift and irregular hours.
- Able to work independently.
- Monitor food safety management systems.
- Monitor SHEQ management systems.
- Comply and monitor with all required SAP functions.- stock reservation ,confirmation of production orders and stock take.
- Ensure that stock rotation is carried out on daily basis ( FEFO and FIFO).
- Research and development work if and when needed.
- Participate in month end stock take and ensure proper stock rotation and management.
- Compliance with deviation procedure.
- Conduct on job training of staff.
- Respond to customer complaints.
- Comply with all company policies and legal requirements.
- Compulsory daily , weekly and month reports ( wastage , deviations, absenteeism ,Job cards , etc)
- Implement and action reasonable additional instructions from time to time
Financial
- Recommends cost saving initiatives and control expenditure within approved parameters
Performance management
- Set annual scorecard & targets and ensure understanding an alignment by team members.
- Enhance team spirit and identify issues to be addressed.
- Review team performance vs. scorecard and targets.
- Review individual performance vs. scorecard and targets.
- Conduct regular, ongoing feedback on performance
Development
- Initiate and manage own development.
- Conduct training needs analysis for team to identify gaps
- Develop individuals according to gaps & plan.
- Coach team members and provide ongoing support.
- New employees inducted effectively.
- Ensure pipeline coverage and development
Industrial relations
- Apply and sustain IR initiatives, policies, procedures, agreements & company values and enhance team spirit.
- Manage conflict and counsel for performance.
- Conduct formal disciplinary hearing as required.
- Incapacitate for poor performance / incompetence
Administration
- Plan manpower to support production & maintenance requirements.
- Process temporary requisitions, induct and utilise temporary employees for ad hoc requirements as per the Labour relations Act.
- Complete time and attendance records, reconcile clocks ad action time errors.
- Ensure leave and absenteeism information is captured, processed and set up leave plans for the team
Change management
- Ensure a healthy team dynamics/ management of diversity.
- Encourage team to participate in organisational surveys, understand the team feedback and develop action plans to rectify
Support Improvement
- Drive improved shift handovers
- Continually investigate opportunities to improve productivity.
- Support initiatives that deliver growth to the business.
- Facilitate and document problem solving
SHEQ
- Adhere to and ensure sub-ordinates adherence to all guidelines related to Security, SHE and operational policies and procedures.
- Issue, control and ensure use of protective/ hygiene clothing.
- Ensure reporting, investigation, documentation and action of safety incidents.
- Comply with all food safety management requirements Job
Stakeholder Engagement
- Assign work and monitor the adherence by service providers according to the scope of work as determined in service level agreement.
Candidate Requirements
Qualification and experience required:
- Diploma or Degree in Hospitality/ Catering sector or equivalent
- Computer literacy
- Minimum 5 years’ experience as a senior chef
- Minimum 3 years management experience
- Airline catering environment, an advantage.
Knowledge and Competencies:
- Good communication and leadership skills
- Valid driver’s license.
- Computer literacy.
- Good understanding of industrial relations.
- Basic business management skills.
- Knowledge of SAP an advantage
- Knowledge of food safety management systems.
- Knowledge of SHEQ management
